Creamy Spinach Sauce

This creamy vegetable sauce is ready in 10 minutes to serve over chicken, rice and potatoes, or to toss with pasta for a Florentine-style dish.

Ingredients

  • 1 can (14 oz.) Popeye® Spinach chopped, rinsed, and drained well in a colander
  • 1/2 cup chopped onion
  • 2 tsp minced garlic, or 1/4 tsp. garlic powder
  • 3 tbsp butter
  • 1/4 cup all-purpose flour
  • 1 1/2 tsp dried basil optional
  • 1/4 tsp black pepper
  • 1 can (14.5 oz.) reduced sodium chicken broth
  • 3/4 cup milk
  • 1/2 cup grated Parmesan cheese optional

Instructions

  • Cook onion and garlic in butter 3 minutes over medium heat in a medium saucepan, or until onion is softened.
  • Stir in flour, basil and pepper until flour is evenly moistened. Add broth and milk. Bring to a boil; reduce heat and simmer 2 to 4 minutes, whisking until smooth and thickened. Stir in spinach and Parmesan, if desired.
  • For pasta, toss prepared sauce with 8 oz. cooked fettuccini or rotini pasta.
