Ingredients
1can(14 oz.) Popeye® Spinachchopped, rinsed, and drained well in a colander
1/2cupchopped onion
2tspminced garlic, or 1/4 tsp. garlic powder
3tbspbutter
1/4cupall-purpose flour
1 1/2tspdried basiloptional
1/4tspblack pepper
1can(14.5 oz.) reduced sodium chicken broth
3/4cupmilk
1/2cupgrated Parmesan cheeseoptional
Instructions
Cook onion and garlic in butter 3 minutes over medium heat in a medium saucepan, or until onion is softened.
Stir in flour, basil and pepper until flour is evenly moistened. Add broth and milk. Bring to a boil; reduce heat and simmer 2 to 4 minutes, whisking until smooth and thickened. Stir in spinach and Parmesan, if desired.
For pasta, toss prepared sauce with 8 oz. cooked fettuccini or rotini pasta.
