Ingredients
2cans(13.5 oz. each) Popeye® Spinach, cut
2tbspbutter
1cupchopped onion
6ozcream cheesecut into cubes, softened to room temperature
1/2tspsalt
1/2tsp black pepper
1/2tspnutmeg
1cupcrushed buttery crackers, such as Ritz
2tbspgrated Parmesan cheeseoptional
Instructions
Heat oven to 375°F. Drain spinach in a colander. Rinse and drain well (press with a wooden spoon to extract most of liquid). Set aside.
Melt butter in a 10-inch oven-proof skillet (wrap handle with foil) over medium-high heat. Add onion and cook 4 minutes or until softened; add cream cheese. Cook 2 minutes or until melted. Remove from heat and stir in spinach, salt, pepper and nutmeg. Top with crushed crackers and Parmesan cheese, if desired.
Bake 15 to 20 minutes or until bubbly and topping is golden brown.
