2 Tbsp. butter
1 cup chopped onion
6 oz. cream cheese, cut into cubes, softened to room temperature
1/2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. nutmeg
1 cup crushed buttery crackers, such as Ritz

Remove from heat and stir in spinach, salt, pepper and nutmeg. Top with crushed crackers and Parmesan cheese, if desired.
