Baked Spinach Gratin
Creamy with a crispy topping, this is a side dish for Sunday suppers and holidays alike.

Ingredients
- 2 cans (13.5 oz. each) Popeye® Spinach, cut
- 2 tbsp butter
- 1 cup chopped onion
- 6 oz cream cheese cut into cubes, softened to room temperature
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp nutmeg
- 1 cup crushed buttery crackers, such as Ritz
- 2 tbsp grated Parmesan cheese optional
Instructions
- Heat oven to 375°F. Drain spinach in a colander. Rinse and drain well (press with a wooden spoon to extract most of liquid). Set aside.
- Melt butter in a 10-inch oven-proof skillet (wrap handle with foil) over medium-high heat. Add onion and cook 4 minutes or until softened; add cream cheese. Cook 2 minutes or until melted. Remove from heat and stir in spinach, salt, pepper and nutmeg. Top with crushed crackers and Parmesan cheese, if desired.
- Bake 15 to 20 minutes or until bubbly and topping is golden brown.
